Beet and Goat Cheese Toast

This easy and elegant toast is perfect for brunch. For an over-the-top presentation, top each serving with a poached egg.

  • 4 slices Oroweat® Organic 100% Whole Grains, toasted
  • 3 medium beets
  • 1 tbsp (15 mL) olive oil
  • 1/4 tsp (1 mL) each salt and pepper
  • 1 ripe avocado, halved, pitted, peeled and mashed
  • 1 cup (250 mL) packed arugula
  • 1/3 cup (75 mL) crumbled goat cheese


  1. Preheat oven to 400°F (200°C). Toss beets with oil, salt and pepper. Wrap in double layer of foil; bake for 45 to 55 minutes or until fork-tender. Let cool; peel and slice.
  2. Spread mashed avocado over each slice of toast. Top with beet slices, arugula and crumbled goat cheese.

TIPS: Use packaged pre-cooked beats or jarred pickled beets to turn this into a 5-minute meal.
