Ingredients

4 slices of Oroweat® Organic 22 Grains & Seeds

2 cups marinated artichoke hearts
-
1 cup cannellini beans - drained

2 tablespoon toasted pinenuts
-
2 tablespoons lemon juice
-
2 cups baby spinach
-
1/4 cup italian parsley chopped
-
boston lettuce
-
chopped scallions
Preparation
- Drain the artichokes, reserving 1 tablespoon of the marinade.
- Char in a grill pan on medium heat.
- Combine in bowl with reserved marinade, cannellini beans, pinenuts, lemon juice, baby spinach and parsley.
- Toast Oroweat® Organic 22 Grains & Seeds.
- In a skillet, brown the Oroweat® Organic Quinoa & Sunflower Seeds.
- Serve on toasted bread, layered with lettuce and sprinkled with chopped scallions for crunch.
