Ingredients

  • 8 slices of Oroweat® Organic 22 Grains & Seeds
  • 250g of chickpeas (400g can – drained)
  • 1 small fennel - finely chopped
  • 6 scallions – thinly sliced
  • 4 dill pickles – finely chopped
  • 1/2 red pepper – finely chopped
  • 1/2 cup vegan mayonnaise
  • 1 clove of garlic – minced
  • 3 teaspoons powdered hot mustard
  • 2 tablespoons tarragon
  • 1/4 cup lemon juice
  • salt and pepper
  • 4 leaves of romaine lettuce - chopped

Preparation

  1. In a bowl, mash together chickpeas.
  2. Stir in fennel, scallions, pickles, red pepper, mayonnaise, garlic.
  3. Add in mustard power, tarragon, lemon juice and season to taste.
  4. Toast the bread, if desired.
  5. Layer onto bread with Romaine.
