8 slices of Oroweat® Organic 22 Grains & Seeds Thin Sliced (or substitute with your favourite Oroweat bread)
VEGETABLE MARINADE
1/4 cup rice wine vinegar
1 tablespoon lemon juice
1 tablespoon dijon mustard
1 teaspoon sesame oil
1/4 teaspoon ground pepper
2 cloves of garlic - minced
1 yellow zucchini – sliced into ribbons
2 green zucchini – sliced into ribbons
12 whole scallions
1 red pepper – cored and sliced into 4 equal lengths (large pieces)
LEMON HERB CREAM CHEESE
1/2 cup vegan cream cheese
1/2 teaspoon lemon zest
1 tablespoon chopped Italian parsley
1 tablespoon lemon juice
1/2 teaspoon tabasco sauce
Combine all of the vegetable marinade ingredients together in a small bowl and set aside.
Place all the prepared vegetables in a large bowl and add marinade to coat.
Combine all of the lemon herb cream cheese ingredients. set aside until needed.
Either over a BBQ or heat a grill pan (brushed with oil) over medium high heat – grill/cook vegetables until cooked through (ie slightly charred, with grill marks).
Grill the Oroweat® Organic 22 Grain Thin Sliced slices.
Allow to cool and spread with lemon herb cream cheese.
Layer with grilled vegetables and top with grilled slice of Oroweat® Organic 22 Grain Thin Sliced.
