Ingredients

  • 8 slices of Oroweat® Organic 22 Grains & Seeds Thin Sliced (or substitute with your favourite Oroweat bread)
  • VEGETABLE MARINADE
  • 1/4 cup rice wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground pepper
  • 2 cloves of garlic - minced
  • 1 yellow zucchini – sliced into ribbons
  • 2 green zucchini – sliced into ribbons
  • 12 whole scallions
  • 1 red pepper – cored and sliced into 4 equal lengths (large pieces)
  • LEMON HERB CREAM CHEESE
  • 1/2 cup vegan cream cheese
  • 1/2 teaspoon lemon zest
  • 1 tablespoon chopped Italian parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon tabasco sauce

Preparation

  1. Combine all of the vegetable marinade ingredients together in a small bowl and set aside.
  2. Place all the prepared vegetables in a large bowl and add marinade to coat.
  3. Combine all of the lemon herb cream cheese ingredients. set aside until needed.
  4. Either over a BBQ or heat a grill pan (brushed with oil) over medium high heat – grill/cook vegetables until cooked through (ie slightly charred, with grill marks).
  5. Grill the Oroweat® Organic 22 Grain Thin Sliced slices.
  6. Allow to cool and spread with lemon herb cream cheese.
  7. Layer with grilled vegetables and top with grilled slice of Oroweat® Organic 22 Grain Thin Sliced.
