Pizza Grilled Cheese

Kids will love this pizza-inspired grilled cheese for lunch – or dinner!

Ingredients

  • 8 slices Oroweat® Organic 22 Grains & Seeds
  • 1 large tomato, thinly sliced
  • 1/4 cup (60 mL) tomato sauce
  • 3 tbsp (45 mL) olive oil, divided
  • 1 clove garlic, minced
  • 1/2 tsp (2 mL) dried oregano
  • 1/4 tsp (1 mL) each salt and pepper
  • 1 1/2 cups (375 mL) shredded mozzarella cheese

Preparation

  1. Toss together tomato slices, tomato sauce, 4 tsp (20 mL) olive oil, garlic, oregano, salt and pepper.
  2. Divide ½ cup mozzarella cheese among 4 slices of bread; top with tomato mixture. Scatter remaining mozzarella cheese over top. Cap with remaining bread. Brush outside slices of bread with remaining olive oil.
  3. Preheat large skillet set over medium-low heat; cook sandwiches, in batches if needed, for 2 to 3 minutes per side or until bread is golden brown and cheese melts. To serve, cut each sandwich in half.

  5. Serve with warmed tomato sauce for dipping.
  6. Add your favourite pizza toppings to grilled cheese as desired.
