Beet and Goat Cheese Toast

Ingredients

3 medium beets

1 tbsp (15 mL) olive oil

1/4 tsp (1 mL) each salt and pepper

1 ripe avocado, halved, pitted, peeled and mashed

4 slices Oroweat® Organic 100% Whole Grains, toasted

1 cup (250 mL) packed arugula

1/3 cup (75 mL) crumbled goat cheese
Preparation
- Preheat oven to 400°F (200°C). Toss beets with oil, salt and pepper. Wrap in double layer of foil; bake for 45 to 55 minutes or until fork-tender. Let cool; peel and slice.
- Spread mashed avocado over each slice of toast. Top with beet slices, arugula and crumbled goat cheese.
Tips
Use packaged pre-cooked beats or jarred pickled beets to turn this into a 5-minute meal.
